My philosophy is to always be passionate about what you do. To be a good Tapster you need to have a passion for beer – you need to be a beer lover not a beer liker! It shows in your heart. I joint own 500 beehives in Berlin. Beer and bees are my religion! Birgit & Bier is one of the best mixed concepts in Germany, it’s a beer garden during the day, with the best beer seven days a week, and a club at night. Our concept wouldn’t work without tank beer, it’s as unique as we are. In the same way you don’t take stress to the beers – if I have had a bad day, I don’t go to the hives – you shouldn’t pour beer if you’re stressed. It will show in the final glass.
If you were a beer, what beer would you be?
I have two answers: First, I’d be a Šnyt. It’s the professional’s pour and it stays fresh for longer. My second choice is Berliner Kindl Jubilaums Pilsener, a local beer. It’s always been seen as the worker’s beer, drunk by manual labourers, but it’s been in Berlin for over 100 years. People joke about it, but I love it. It represents part of who I am!
